Strawberry fields forever...


Lately I have been craving something sweet and homemade, I must preface that I am not much of a cook, but I found this yummy recipe for Strawberry Shortcake  on a food blog I have been oogling over the last couple days , Annies Eats, she has tons of recipes from appetizers to desserts this is the first recipe I attempted I can not wait to try more!



 This is what my shortbread's looked like, they were just sweet enough and they would be perfect with butter and jam for breakfast. And they were pretty quick and easy to make.

here is the recipe for the shortbread:

Ingredients:

2 cups flour
1/4 cup plus 2 tbsp. sugar, divided
1 tbsp. baking powder
1/2 tsp. salt
1 cup heavy cream
 First I put all the dry ingredients into a large bowl, besides the two additional tablespoons of sugar, and mixed them with a fork, then I slowly poured the heavy cream in. This yields a pretty dry crumbly mixture with some large clumps of dough, I took the larger clumps and combined them with crumbly piece's and put it into a greased cornbread baking pan, and just like the recipe says the piece's will bake together so don't worry too much about how crumbly it is, and need not knead the dough.Then I sprinkled the remaining sugar on the top of the breads. 

Then ....I preheated the oven to 400 degrees, once heated I placed the breads in the oven for 15 min, and watched them carefully, they were a golden brown when fully cooked, and I instantly removed them from the pan and placed them on a plate to cool.



For the Strawberry's:
Ingredients:
16oz strawberry's chopped
confectioners sugar

I put half the Strawberry's in a bowl and sprinkled 2 tablespoons of confectioners sugar, then I used a fork to mash the strawberry's with the sugar, this was the most difficult part. And I cheated on the whipped cream, just used store bought. 

I used both the fresh strawberry's and mashed to top the breads, then sprayed the whipped cream as desired, then ate every       last              bit       from my plate!
